About this journal

Last month your banana bread came out perfect. This month, same recipe, same bananas, and it sank in the middle. You have theories: the oven, the humidity, maybe the eggs. You don't actually know, because you didn't write anything down.

That's where a lot of home bakers get stuck. The good results happen by accident, and nobody can tell you how to repeat them.

The Baking Journey is a baking journal for turning lucky bakes into reliable ones. The habit behind it is simple. Weigh everything in grams, change one thing at a time, and write down what happened while the bake is still cooling on the rack. After a few rounds, you know why something worked, and you can make it again on purpose.

It starts with the thing that quietly ruins more bakes than bad recipes do: your oven. Countertop ovens and turbo broilers are often off by twenty degrees or more, so you'll find your real temperature and your hot spot before anything else. It's also written for baking here, where flour soaks up humid air, dough proofs in half the time the imported cookbook promised, and butter goes soft before you've finished creaming. Pandesal, ensaymada, leche flan, and brazo all come up along the way.

From there, it moves across three levels: following a recipe properly, understanding what each ingredient is doing, and adapting recipes until they're yours. There's even a page on costing a batch, in case the pre-orders start coming in.

What's inside

  • 12 bake session logs — the one change you made, the real oven temperature, and how the crumb turned out
  • 12 one-change logs — a running record of which tweak made the biggest difference
  • 9 recipe cards with grams and baker's percentages — your tested versions, in your own short steps
  • 3 taste test pages — honest feedback, starting with "would you eat a second one?"
  • 6 "Notes From a Baker" pages — for the tita, teacher, or class instructor who knows the thing you don't
  • 15 skill pages across three levels, each with a small experiment to try
  • An oven check, a hot-kitchen guide, a baking glossary, 12 weekly reflections, and milestone checks

It's for beginners who just bought their first oven, home bakers tired of results that change every time, and anyone quietly thinking about selling someday. It's also a lovely gift for the friend who brings a tray of brownies to every Christmas party, especially with a kitchen scale and an oven thermometer tucked in beside it.

Bake it again, write it down, and the recipe starts to belong to you.
